Baccalà con Patate

Nothing beats a cozy, flavorful dish like this to end the week right

Ingredients

    lbs salted codfish

  • 1

    (28 oz) can tomato purée

  • 2

    cloves garlic, minced

  • 1/2

    cooking onion, chopped

  • 5

    medium potatoes, peeled and chopped

  • 1/2

    cup Kalamata olives

  • 1

    tsp dried oregano

  • 1

    tbsp red wine vinegar 

  • 1/2

     tsp chili flakes (optional)

  • 2

    bay leaves

  • 4

    tbsp olive oil

  • 1/2

  • Salt and pepper, to taste

There’s nothing like gathering around the table for a comforting Sunday meal, and Mama’s homemade Baccalà con Patate never disappoints! This classic dish is all about tender salted cod, hearty potatoes, and a rich tomato sauce simmered to perfection. It’s a labor of love that takes a few days to prepare, but the end result is so worth it especially when shared with family.

To make it even more special, we add a splash of Gratsi Rosé to the sauce, bringing a subtle depth that pairs beautifully with the briny cod and creamy potatoes. A glass of that same rosé on the side just makes it all the more perfect.

STEP 1

Prep the Cod: Soak the cod in cold water for 3 days, changing the water twice daily. Rinse one last time, cut into pieces, and set aside.

STEP 2

Build the Base: In a pot, heat olive oil over medium heat. Sauté garlic and onions until fragrant, then add potatoes and cook for 2 minutes.

STEP 3

Simmer: Add tomato purée, bay leaves, chili flakes, oregano, salt, pepper, and Gratsi rosé. Add enough water to cover and simmer until potatoes are tender.

STEP 4

Finish: Add cod and olives, cooking gently until the fish is warmed through. Adjust consistency with water if needed.
